New Vegetable: Spaghetti Squash

This week at the WW meeting, the leader stressed getting fruits and veggies into every meal or snack everyday. Fruit isn't hard for me- I love fruit, but vegetables are a lot harder for me to incorporate. I like broccoli, cauliflower, corn (if you consider it a veggie) and occasionally spinach.

My friend K is a food scientist and enjoys veggies so she vowed to help me eat more veggies. Last night she cooked us dinner. It was 3 oz of chicken breast with a little bit of sprinkled cheese, 1 cup of spaghetti squash and tomato sauce with some pureed veggies snuck in and a sprinkling of Parmesan cheese on top. 7  points total.

Verdict: Spaghetti squash isn't as similar to spaghetti as I had hoped, but when dressed up in sauce, it's not bad. I would and probably will eat it again.

After we let dinner settle in our stomachs, we did a half hour of yoga that she had recorded on TV and then watched Hungry Girl's TV show, which was fabulous and Mexican themed for this episode. It gave us some great ideas!
